A refreshing appetizer perfect for entertaining. It is so easy to make and ready in minutes. Once the shrimps are cooked for a couple of minutes, place them in an ice bath to stop the cooking. Overcooked shrimps are tough and rubbery. Display the shrimps in a glass for an impressive presentation.
Shrimp Cocktail
(Serves 4)
Ingredients:
12 shrimps
1/2 cup water
1 bay leaf
10 peppercorns
1 lemon (cut into wedges)
Salt
Method:
Clean and devein the shrimps leaving the tail. Boil water with little salt and rest of the ingredients. Add shrimps to the flavoured water and cook for a couple of minutes till they change colour and no longer opaque. Remove shrimps and put them in a bowl of cold water to cool. Drain and keep shrimps cold till ready to serve.
Cocktail Sauce
Ingredients:
1/2 cup ketchup
2 tablespoons chilli sauce
dash of Worcestershire sauce
dash of Tabasco sauce
horseradish and lemon juice (optional)
Method:
Mix the above cocktail ingredients. Stir and serve with cooked shrimps.
