A dish we cooked at Home Science college in Mumbai. I have faint memories of the practical classes but thanks to my journal, which I have treasured safely all these years. The recipe for this dish especially caught my attention as it calls for few ingredients. I have tried it often especially on days I feel lazy or in a hurry even for a party as it is super simple, easy and delicious. No grinding involved and ready in minutes.
The chicken is cooked with sautéed onions, ginger, garlic and turmeric powder. Halfway through the cooking process, curds are added with green chillies to balance the sourness. Finished with a sprinkle of garam masala powder and garnish of coriander leaves, this dish is tasty, rich and creamy. It can be prepared with boneless or bone-in chicken pieces. Eaten with rice or roti, finger-licking good.

Spiced Chicken In Curds
(Serves 8)
Ingredients:
1 1/2 kg whole chicken or boneless
1 large onion (chopped)
4 green chillies (cut into rounds)
4 large cloves of garlic (finely chopped)
1” piece of ginger (grated)
1/2 teaspoon turmeric powder
1 teaspoon garam masala powder
1/2 a bouillon cube
1 cup curds or sour cream
1/4 + 1/2 cups water
2 tablespoons oil
salt
Method:
Deskin chicken and cut into pieces. Wash and season with salt.
Heat oil in a pan and sauté onion till translucent. Add garlic, ginger and cook for a couple of minutes. Stir in the chicken and turmeric powder. Cook with 1/4 cup water, cover lid.
When chicken is three-fourth cooked, add the beaten curds, green chillies, garam masala powder and bouillon cube. For a gravy consistency, add 1/2 cup water. Simmer on medium flame, check for seasoning and garnish with coriander leaves once chicken is cooked through.
Serve hot with rice or roti.

Note:
- I have used sour cream for a rich, creamy consistency.
- If you don't want gravy, then omit the 1/2 cup water at the end and dry out the liquid.
- Everest garam masala was used.
