A healthy appetizer, quick and easy to prepare. Usually made with frozen spinach but I prefer using fresh. The squares taste like quiche without the crust. Delicious and great for potluck or any parties.

Spinach Squares
(Makes 20)
Ingredients:
1 bunch spinach (around 8 cups, chopped finely)
1 large onion (finely chopped)
2 cloves of garlic (finely minced)
1 big green chilli (finely chopped)
1/2 tsp chilli powder
1/4 tsp black pepper
1 tablespoon breadcrumbs
2 tablespoons of butter
3 eggs
1/4 cup white flour
1/3 cup grated cheddar cheese
1/4 cup milk
1/4 tsp baking powder
salt
Preparation:
Heat butter in a pan on medium heat. Add onion, garlic and green chilli. Sauté till onion is soft and add chilli powder, pepper powder followed by spinach (washed and well drained). Stir spinach and add breadcrumbs along with salt. The spinach will wilt in a couple of minutes and the breadcrumbs will absorb any moisture. Shut off flame and allow mixture to cool.
Preheat oven to 200 C or 400 F.
In a bowl, beat the eggs along with milk followed by the flour and baking powder. With a spoon, mix in the cool spinach mixture. Add cheese and pour mixture into a greased 9" x 7.5"baking dish. Bake for 15 to 20 minutes till set. Remove baking dish from the oven, let it cool completely before cutting into squares. Serve squares as appetizers.
