Stuffed Zucchini Boats with Shrimps
(Serves 4)
Ingredients:
4 zucchinis
1/2 teaspoon pepper powder
olive oil
salt
Method:
Cut zucchinis lengthwise in half and scoop out the centres. Keep pulp aside for filling and place zucchini halves in a baking tray. Sprinkle halves with olive oil, salt and pepper powder
Filling
Ingredients:
1 large onion (finely minced)
2 large cloves of garlic (minced)
2 green chillies (minced)
1 tomato (chopped)
1/4 teaspoon turmeric powder
reserved zucchini pulp
1/4 teaspoon pepper powder
2 tablespoons breadcrumbs
1 1/2 cups fresh shrimps (shelled and deveined)
handful coriander leaves (chopped)
1/2 cup shredded cheddar cheese
2 tablespoons olive oil
salt
Method:
In a pan, heat olive oil, add onion, garlic and green chillies. When onion is soft, add tomato and zucchini pulp. Stir for a couple of minutes and then add turmeric powder, pepper powder, salt and breadcrumbs. Any moisture in the mixture will be absorbed by the breadcrumbs. Remove pan from heat and leave filling to cool.
Lightly season shrimps with salt and add to the filling which should be at room temperature along with coriander leaves.
Preheat oven to 400 F or 200 C.
Discard any moisture released from the zucchini halves. Spoon filling into zucchini halves and top with cheese. Place on baking tray and bake for 10 minutes till cheese melted. Switch off the oven and leave boats in the oven for an additional 5 minutes. The shrimps will be perfectly moist and cooked.
Serve stuffed zucchini boats as a side dish.
