This sweet, quick and easy dish is very common in the Indian households. Often, enjoyed after a meal or in the evening with a cup of tea. Enriched with milk and nuts, this dish is healthy and nutritious.
Vermicelli are thin long strands of pasta, more like a skinnier spaghetti. It is made out of maida which is refined and bleached wheat flour. A great alternative to pasta as it is low in carbohydrates and cholesterol.
Besides this sweet dish, vermicelli is used in preparation of other desserts. Also, added to soups, in pulao it is substituted for rice, used in the preparation of a vegetable dish and even to coat seafood or Scotch egg.

Sweet Vermicelli (Meethi Seviyan)
(Serves 6)
Ingredients:
200 gms roasted vermicelli
1 1/2 cups milk
1/4 cup sugar
1/4 tsp cardamom powder
a pinch of saffron
a pinch of salt
2 tablespoons ghee
1/4 cup cashew nuts
1/4 cup raisins
Method:
In a deep bowl, break vermicelli into pieces.
Warm milk with saffron and sugar. Keep aside.
On medium flame, heat ghee in a pan and lightly fry the cashew nuts and raisins. Next, add the vermicelli, salt and stir well. Keep the flame on the lowest setting and add the warm milk along with the cardamom powder. Stir till the milk is completely absorbed and the vermicelli cooked.

Note:
- Buy roasted vermicelli which are readily available in the market. If you are unable to buy the roasted one, then after breaking the regular white vermicelli, roast them till light brown on a low heat. The key to getting separated strands of vermicelli lies in good roasting.
