Commonly prepared for Christmas, these drops are also known as rocks or clusters. Traditionally made with full-fat milk, condensed milk, sugar, vanilla extract, cocoa powder, butter and walnuts, I have simplified the procedure by using just three ingredients in three easy steps; melt, mix and drop. Super quick and incredibly simple to make, these drops are ready in an hour. Smooth, creamy and packed with walnuts, they literally melt-in-the-mouth.
Using the double boiler method, I have tempered Wilton Candy Melts and mixed in chopped walnuts to coat with the chocolate. A dash of vanilla extract was added to the mix with a tablespoon of the mixture dropped onto parchment paper. Get the children involved to spoon and drop. These drops were refrigerated for 30 minutes or until firm and then stored in an airtight container at room temperature. They make a nice addition to the Christmas platter and can be served in decorative petit four paper cups. Melted white chocolate can be drizzled on top for an appealing look.

Walnut Drops
(Yields 20 to 24)
Ingredients:
340 grams Wilton Candy Melts – Light Cocoa (1 pack, around 2 cups)
2 cups walnut (chopped into big pieces)
1/2 teaspoon vanilla extract
Method:
Line a baking sheet with parchment paper.
Heat a saucepan with water and bring to simmer. Remove from heat and place a bowl with the melts on top of the saucepan. Stir constantly, without beating, until smooth.
(Note: Ensure that the bowl fits over the saucepan creating a seal. The simmering water (not boiling) should not touch the bottom of the bowl.)
Mix in the vanilla extract and walnuts with the melted candy till well coated.
Drop 1 tablespoon of the mixture onto the parchment paper. Refrigerate the baking sheet with drops for 30 minutes or until they are firm. (Note: To serve in decorative petit four paper cups, drop the mixture by teaspoons.)
For an appealing look, drizzle the top with melted white chocolate.
Store in a plastic container with parchment paper in between the layers. Refrigerate for a longer shelf life.

Note:
- For a beautiful shine, a tiny bit of vegetable shortening can be added to the melts.
- Walnuts can be substituted with raisins, dried fruits or nuts of your choice. Use 1 cup of your favourite ingredient to 1 cup of melted chocolate, not more.
- Do not microwave melts as recommended on the package as uneven distribution of heat can ruin or burn the chocolate.

- Wilton Candy Melts can be substituted with 1 cup Hershey’s milk chocolate chips and 1 cup Hershey’s semi-sweet chocolate chips. Rest of the ingredients and procedure follow as above.
