Every week, our local supermarket has a good deal on coriander leaves. Two bundles can be purchased for a reasonable price. I love coriander leaves, so aromatic, flavourful and versatile, which I include in most of my dishes either to garnish or blend into a paste with other ingredients. To elevate the pork chops and make them tasty, I have marinated them with the green recheado masala. This mildly spiced paste consists of coriander leaves, green chillies, garlic, ginger and spices. An onion was caramelized and ground with the rest of the ingredients that provided some sweetness. The pork chops were marinated with the ground paste for a couple of hours and baked at 400 F or 200 C for 10 minutes. Then, broiled on either sides for 5 minutes each until done, resulting in scrumptious pork chops, which were hard to resist.

You have to keep a watchful eye when broiling as the food cooks so fast that from a quick sear it can burn in no time. What we refer to as broiling in North America is known as grilling in the United Kingdom and Australia.

Baked Pork Chops With Green Recheado Masala
(Serves 8)
Ingredients:
8 bone-in pork chops (about 4 pounds or 1.800 kg)
salt
Grind to a fine paste (with 1/4 cup vinegar)
2 cups coriander leaves with tender stalks (tightly packed)
4 to 6 long green chillies
1/4 teaspoon turmeric powder
10 peppercorns
1 teaspoon cumin seeds
2 cinnamon sticks (1.5" each)
6 cloves
1" piece of ginger
6 large cloves of garlic
1 medium-sized onion (caramelized in 1 tablespoon of oil)
Method:
Wash and pat dry pork chops with absorbent paper towels. Season with salt.
Marinate pork chops with the ground paste for a couple of hours or overnight. Cover and refrigerate while marinating.
Preheat oven to 400 F or 200 C.
Line a baking sheet with aluminum foil. Place pork chops and bake for 10 minutes.
Adjust the oven rack to the topmost position and set the oven to broiler mode at 500 F or 260 C.
Keep the baking tray under the broiler for 5 minutes. Remove tray from the oven, turn the chops and broil for an additional 5 minutes till the chops are cooked through and slightly charred.
Serve pork chops as a starter or with the main meal.
